Ruby Chocolate Creations by Reymers' Traditions

Ruby chocolate is considered fourth type of chocolate, after dark, milk, and white. It's naturally pink due to the color of the cocoa bean and how it's processed. It's deliciously unique, sweet yet slightly sour with fruity berry undertones, and a creamy texture. It pairs so nicely with a rich dark chocolate. 
Barry Callebaut intruduced it in 2017 and we are so glad he did.

I've been playing with this fine chocolate lately and have come up with some sweet creations...

The Robust Ruby Chocolate

 This decedent chocolate truffle is an absolute must have for the coffee lover in your life.

       I use the finest ruby chocolate, a naturally pink chocolate made from the ruby cocoa bean.  It is deliciously smooth and offers hints of fruit, a very unique taste.  Ruby chocolate pairs very well with robust coffee flavor, which is how I came up with the name Robust Ruby. 

       This I'm sure will be a very popular confection for Reymers' Traditions.

Fruit and Nut Easter Egg

Did you know that Reymers' Brothers Candy was credited for the invention of the chocolate fruit and nut Easter egg? 
It's true and a fun piece of history!  
Traditional chocolate fruit and nut Easter eggs are a delightful chocolate egg, filled with a sweet mix of candied fruits, nuts, and creamy mixture like a nougat or fondant.  Recipes vary with a variety of ingredients.  This is a traditional Easter treat made only by experienced chocolate candy makers. 


Reymers' Traditions, my recipe, will feature a dark chocolate shell, filled with vanilla bean white chocolate ganache, Morello cherries, and pistachios.  This will be also a featured Bon Bon... Vanilla Morello Pistachio.
